Eliza Acton's crumpets represent a mid-19th-century refinement of this quintessentially English teatime bread. Crumpets originated in the 17th century as thicker, flatter griddle cakes, evolving by the Victorian era into the holey, yeast-leavened variety we recognise today. Acton's 1845 recipe captures this transition, using a batter poured into rings on a griddle, creating the characteristic spongy texture and surface holes through careful fermentation. These were middle-class fare, served toasted with butter at tea. Acton's meticulous instructions helped standardise crumpet-making in domestic kitchens, influencing subsequent cookbook authors and cementing crumpets as a British teatime staple.

Ingredients

  • · 7 g dried yeast
  • · 300 ml warm milk
  • · 150 ml warm water
  • · 1 teaspoon salt
  • · 1/2 teaspoon bicarbonate of soda

Method
