Ingredients

  • · 1kg beef chuck, cubed
  • · 3 tbsp plain flour
  • · 2 tbsp beef dripping
  • · 2 onions, chopped
  • · 3 carrots, chunks
  • · 2 sticks celery, sliced
  • · 800ml beef stock
  • · 2 tbsp Worcestershire sauce
  • · Bouquet garni
  • · For dumplings: 150g self-raising flour, 75g suet, pinch salt, cold water

Method

    Toss beef in flour. Brown in dripping in batches. Remove.

    Sauté onions, carrots, celery until softened.

    Return beef; add stock, Worcestershire, bouquet garni.

    Simmer covered 2 hours until tender.

    Mix dumpling dry ingredients. Add water bit by bit to a soft dough.

    Shape 12 walnut-sized dumplings. Drop on top of stew.
