Ingredients

  • · 1 goose (4.5–5kg)
  • · For stuffing: 6 onions, 3 tbsp sage leaves, 250g breadcrumbs, 60g butter, 1 egg, salt, pepper
  • · 6 small apples
  • · 1 tbsp plain flour
  • · 500ml stock

Method

    Preheat oven to 200°C. Prick goose skin all over.

    Chop onions, blanch 5 min, mix with breadcrumbs, chopped sage, butter, egg, salt.

    Stuff cavity. Season goose all over.

    Roast 200°C 30 min, then 170°C for 2.5 hours (drain fat regularly).

    Add apples last 40 min.

    Rest goose 20 min covered.

    Gravy: skim fat, sprinkle flour into pan juices, whisk with stock, simmer 5 min.
