Curry of Fowl (Anglo-Indian, 1861)

From Book of Household Management · Isabella Beeton · 1861

Beeton's take on a curried chicken — the mild, apple-sweetened Victorian household version.

History

Curry of Fowl from Isabella Beeton's 1861 'Book of Household Management' exemplifies Anglo-Indian cuisine—British adaptations of Indian curries during colonial rule. By the mid-19th century, curry had become fashionable in British households, simplified from complex Indian originals using curry powder (a British invention) rather than fresh spices. Beeton's recipe catered to middle-class Victorian cooks seeking exotic flavours without authentic techniques. These anglicised curries typically featured chicken in mild, flour-thickened sauces with apples, raisins, and commercial curry powder. The dish reflects imperial Britain's culinary appropriation and remains a foundation for British curry house traditions.
