Eliza Acton's Lemon Cakes appeared in her groundbreaking 'Modern Cookery for Private Families' (1845), a cookbook that revolutionised British culinary writing by introducing precise measurements and clear instructions. These small, delicate cakes were typically made with butter, sugar, eggs, flour, and lemon zest or juice, representing the Victorian middle-class tea table tradition. Acton's systematic approach influenced later cookbook authors, including Mrs. Beeton. The cakes were part of Britain's refined baking culture, served at afternoon tea—a practice popularised during this era. Similar lemon-flavoured small cakes remain popular in British baking today, often as cupcakes or tea cakes.

Ingredients

  • · 200g butter, softened
  • · 200g caster sugar
  • · Zest of 3 lemons
  • · Juice of 1 lemon
  • · 4 large eggs
  • · 225g self-raising flour
  • · 1 tbsp milk

Method

    Preheat oven to 170°C. Line a 12-cup muffin tin.

    Cream butter, sugar and lemon zest until pale.

    Beat in eggs one at a time, adding a spoon of flour with each.

    Fold in remaining flour, lemon juice and milk.

    Divide between cups; bake 20–22 minutes until golden.

    Cool. Dust with icing sugar to serve.
