History
Eliza Leslie's Ginger Nuts, published in her influential 1828 'Seventy-Five Receipts', represent early American spice biscuits descended from British gingerbreads and Dutch speculaas. Leslie, a Philadelphia cookery writer, adapted European traditions for American kitchens, creating crisp, spiced biscuits popular in middle-class households. Ginger nuts typically combined flour, sugar, butter, molasses, and ground ginger, sometimes with other spices. They were economical, kept well, and suited tea drinking customs adopted from Britain. Leslie's recipes helped standardise American baking measurements and techniques, making her one of America's first influential cookbook authors. These biscuits evolved into modern gingersnaps and ginger biscuits.

Ingredients
- · 450 g plain flour
- · 225 g butter, softened
- · 225 g dark brown sugar
- · 120 ml molasses
- · 2 teaspoons ground ginger
- · 1 teaspoon ground cinnamon
- · 1/2 teaspoon bicarbonate of soda
Method

Cream butter and sugar until fluffy.

Beat in molasses.

Mix flour with ginger, cinnamon and bicarbonate of soda.

Gradually work flour mixture into butter mixture to form a stiff dough.

Roll into walnut-sized balls, place on baking sheets and bake at 180°C for 12-15 minutes.
