History
Sauerbraten is a traditional German pot roast with medieval origins, created as a preservation method before refrigeration. Beef was marinated in vinegar, wine, and spices for several days to tenderise tough cuts and extend shelf life. By the 19th century, it became a festive dish in the Rhineland region, particularly around Cologne and Aachen. Henriette Davidis's 1845 cookbook helped standardise the recipe for middle-class German households. Variations include using red wine or buttermilk marinades, and the dish traditionally features a sweet-sour gravy thickened with gingersnaps. German immigrants brought sauerbraten to America, where it remains popular in German-American communities.

Ingredients
- · 1.2kg beef topside
- · For marinade: 500ml red wine vinegar, 500ml water
- · 2 onions, sliced
- · 2 carrots, sliced
- · 3 bay leaves
- · 6 cloves
- · 10 juniper berries
- · 1 tbsp black peppercorns
- · For braising: 2 tbsp oil, 6 gingerbread biscuits (Lebkuchen), crumbled
- · 2 tbsp raisins, 1 tbsp sugar

Combine marinade ingredients in a large glass bowl. Submerge beef.

Refrigerate 3 days, turning daily.

Lift beef out, dry well. Reserve marinade.

Brown beef in oil in a heavy Dutch oven on all sides.

Strain marinade over. Add crumbled gingerbread, raisins, sugar.

Cover and braise at 150°C for 3 hours until tender.
