History

Kajsa Warg's 'Hjelpreda i Hushållningen för Unga Fruentimber' (1755) is Sweden's first printed cookbook by a woman and contains early recipes for meatballs (köttbullar). Warg, housekeeper to a Swedish countess, documented aristocratic Swedish cooking of the era. Her meatballs combined minced meat with bread, cream, and spices—simpler than modern versions but establishing the fundamental technique. The dish reflected Swedish culinary traditions of preserving meat through grinding and extending it with bread. Warg's cookbook profoundly influenced Swedish home cooking for generations, and her meatball recipe evolved into Sweden's national dish, now iconic worldwide through Swedish-American immigration and modern global food culture.

Ingredients

  • · 500g minced beef+pork mix
  • · 1 onion, grated
  • · 100g breadcrumbs
  • · 150ml milk
  • · 1 egg
  • · 1/2 tsp allspice
  • · 1/2 tsp black pepper
  • · 1 tsp salt
  • · 3 tbsp butter
  • · 1 tbsp flour
  • · 300ml beef stock
  • · 200ml cream
  • · 1 tsp Dijon mustard
  • · Lingonberry jam to serve

Method

    Soak breadcrumbs in milk 5 min.

    Combine with mince, onion, egg, spices. Rest 30 min.

    Roll into small balls (~25g each).

    Brown in butter in batches, 6 min each. Remove.

    Sprinkle flour into pan, cook 1 min.

    Whisk in stock then cream. Add mustard.

    Return meatballs, simmer 8 min. Serve with mash and lingonberry.
