Baking powder

Ingredient

A ready-mixed raising agent containing bicarbonate of soda, a dry acid (usually cream of tartar), and a starch buffer, which together produce carbon dioxide to leaven baked goods. Unlike bicarbonate of soda, it requires no additional acid in the recipe. Most commercial baking powders are double-acting, releasing gas twice — once when wet and again in the oven.
