Celeriac

Also known as: celery root · turnip-rooted celery

A knobbly root vegetable with a creamy white flesh and a mild celery-like flavour, used raw in remoulade or cooked in soups, gratins, and purees. Peel thickly to remove the rough outer skin before use. It discolours quickly once cut, so drop prepared pieces into acidulated water.
