Dough lame

A thin, razor-sharp blade mounted on a handle or stick, used to slash the surface of shaped bread dough just before baking. Scoring with a lame controls the direction in which the loaf expands in the oven, producing an even rise and a decorative ear. The curved blade allows for angled cuts that encourage a pronounced ridge to form.
