Also known as: layering

The process of folding butter repeatedly into dough to create many thin alternating layers, as used for croissants and puff pastry. Each fold multiplies the layers, producing a flaky, airy texture when baked. Keeping the butter cold throughout is essential to prevent it merging with the dough.
