A chemical reaction between amino acids and reducing sugars that occurs when food is heated above approximately 140°C, producing hundreds of flavour compounds and the characteristic brown colour of seared meat, toasted bread, and roasted coffee. It is distinct from caramelisation, which involves only sugars.
