Pectin
IngredientA naturally occurring carbohydrate found in the cell walls of fruits, particularly apples, citrus pith, and gooseberries, which acts as a setting agent when combined with sugar and acid. Jam sugar contains added pectin for fruits that are naturally low in it, such as strawberries.
