Pot-roast

Technique

A method of cooking a large joint of meat in a covered pot with a small amount of liquid and aromatic vegetables over a low heat on the hob or in the oven. Unlike braising, the meat is not fully submerged; it steams and bastes in its own juices and the trapped moisture.
