Ribbon stage
TechniqueThe point at which a whisked mixture of eggs and sugar becomes pale, thick, and voluminous enough that the whisk leaves a thick, slowly dissolving trail on the surface — resembling a ribbon. It indicates sufficient air has been incorporated for a light sponge or mousse.
