Risotto
TechniqueA northern Italian method of cooking short-grain rice — such as Arborio or Carnaroli — by adding warm stock ladle by ladle and stirring continuously to coax starch from the grains, producing a creamy, cohesive dish. It is finished off the heat with cold butter and Parmigiano-Reggiano in a technique called mantecatura.
