Scalding
TechniqueTo heat milk or cream to just below boiling point, approximately 82°C, until tiny bubbles appear at the edges of the pan. It was historically used to kill bacteria and is now employed to infuse flavours into dairy, or to speed up yeast-based bread doughs.
