Vinaigrette

A simple emulsified dressing made from oil and an acid — typically wine vinegar or lemon juice — in a ratio of roughly 3:1, seasoned with salt, mustard, and sometimes a little honey. It must be whisked or shaken just before dressing salad leaves, as it will separate on standing.
