Xanthan gum
IngredientA polysaccharide produced by bacterial fermentation of sugar, used in very small quantities as a thickener, stabiliser, and emulsifier. It is particularly valuable in gluten-free baking, where it replicates some of the binding and stretching properties of gluten.
