A Victorian savoury dish of roasted bone marrow spread on toast.

Historical note: Split some marrow bones, extract the marrow, and spread it thick upon toasted bread...

History

Marrow Toast appeared in Eliza Acton's *Modern Cookery for Private Families* (1845), a foundational British cookbook. The dish involved spreading roasted bone marrow on toasted bread, often seasoned with pepper and salt. Bone marrow had long been prized in British cookery for its rich flavour and was considered both nourishing and a delicacy. Similar preparations existed in earlier English cookery, but Acton's precise instructions typified her revolutionary approach to recipe-writing. Marrow bones were commonly available from butchers, making this an accessible dish for middle-class Victorian households. The preparation has persisted in British gastropubs and appears in Fergus Henderson's modern nose-to-tail cooking movement.
