Celeriac dauphinoise

Technique

A gratin in which thinly sliced celeriac replaces or partly substitutes potato, layered with cream and garlic then baked until tender and golden. The celeriac lends a subtle, celery-like flavour and pairs particularly well with thyme and gruyère. It is a lower-glycaemic alternative to the classic potato version.
