Celeriac schnitzel

A vegan preparation in which thick slices of celeriac are breadcrumbed and shallow-fried until golden, mimicking a traditional escalope. The celeriac is parboiled first so the interior is tender by the time the crust is crisp. It is a popular plant-based main course.
