Nap / Nappe

Also known as: Coat

To coat food with a sauce so that it evenly covers and clings to the surface. The term 'nappe' also describes the stage at which a cooked custard or sauce is thick enough to coat the back of a spoon and hold a clear line when you draw your finger through it.
