Celebrate Great British Pea Week With A Summer Risotto

This summer, why not whip up a delightful Pea and Leek Risotto that encapsulates the essence of the season? To start, gather the following ingredients for the risotto: - 300g (10.5 oz) arborio rice - 1 tablespoon olive oil - 1 medium onion, finely chopped - 2 leeks, trimmed and sliced - 1 litre (4 cups) vegetable stock (or a mixture of stock and white wine) - 250g (9 oz) fresh peas, shelled - 50g (1.75 oz) grated Parmesan cheese - Salt and pepper to taste - Fresh mint leaves for garnish

Begin your cooking process by heating the olive oil in a large, heavy-based pan. Gently sauté the chopped onion and leeks over a medium heat until they become tender and fragrant. The goal here is to soften them without browning.

Next, add the arborio rice to the pan, stirring frequently for about two minutes until the grains are lightly coated and transparent. This is crucial for achieving that creamy risotto texture.

Slowly ladle in the warm vegetable stock, one cup at a time, allowing the rice to absorb the liquid before adding more. Stir continuously to release the starches, which will give your risotto its characteristic creaminess. After approximately 15 minutes, stir in the fresh peas and continue cooking where the risotto should take about 18-20 minutes total.

Once the rice is al dente, remove the pan from the heat and mix in the grated Parmesan cheese. Season with salt and pepper according to your taste. For a finishing touch, pop in some fresh mint leaves that will give the dish a pop of colour and flavour.
