50 g cold butter — diced
100 g mature cheddar cheese — grated
2 tbsp fresh chives — finely chopped
150 ml whole milk — plus extra for brushing
0.5 tsp mustard powder

Preheat your oven to 220°C (200°C fan). Line a baking tray with baking parchment.

Sift the self-raising flour and baking powder into a large bowl. Add the mustard powder and a pinch of salt.

Rub the cold butter into the flour with your fingertips until the mixture resembles fine breadcrumbs.

Stir in three-quarters of the grated cheese and all the chopped chives.

Pour in the milk and mix quickly with a knife until the dough just comes together. Do not overwork it.

Turn the dough out onto a lightly floured surface and pat it gently to about 2cm thick. Use a 6cm round cutter to stamp out scones, pressing straight down without twisting. Re-form the scraps gently and cut more rounds.

Place the scones on the prepared tray, leaving a little space between each. Brush the tops with a little milk and sprinkle with the remaining cheese.

Bake for 12– until risen and golden. Cool on a wire rack and serve warm or at room temperature.
