8 piece gluten-free bread — slices
40 g butter — softened, for spreading
120 g cooked ham — sliced
100 g mature Cheddar cheese — sliced or grated
1 piece tomato — thinly sliced
0.25 tsp black pepper — freshly ground

Instructions
Step by step

Butter one side of each slice of gluten-free bread.

Place four slices buttered-side down on a clean surface.

Layer each with ham, Cheddar cheese and tomato slices. Grind over a little black pepper.

Top with the remaining bread slices, buttered-side up.

Heat a large non-stick frying pan or sandwich press over medium heat.

Place the sandwiches in the pan (work in batches if needed) and cook for 3– on each side, pressing gently with a spatula, until golden and crisp and the cheese has melted.

Remove from the pan, slice in half diagonally and serve immediately.
