600 g carrots — peeled and sliced on the diagonal
40 g unsalted butter
2 tbsp honey
3 piece fresh thyme — sprigs
150 ml water
1 pinch salt — to taste
1 pinch black pepper — to taste

Instructions
Step by step

Place the carrot slices in a large frying pan or sauté pan along with the butter, honey, thyme, water and a pinch of salt.

Bring to a simmer over medium heat, then cover and cook for , stirring occasionally.

Remove the lid and increase the heat slightly, cooking for a further 8– until the water has reduced to a syrupy glaze and the carrots are tender.

Stir gently to coat the carrots in the glaze, then season with black pepper.

Discard the thyme sprigs and serve warm.
