300 g raw king prawns — peeled and deveined
4 tbsp laksa paste — shop-bought or homemade
400 ml coconut milk
500 ml chicken stock
100 g tofu puffs — halved
100 g beansprouts
1 tbsp fish sauce
1 tsp palm sugar — or soft light brown sugar
1 piece lime — cut into wedges
1 bunch fresh coriander — roughly chopped
0.5 bunch Vietnamese mint — or regular mint
1 piece red chilli — sliced
1 tbsp vegetable oil

Cook the rice vermicelli noodles according to packet instructions. Drain, rinse under cold water, and set aside.

Heat the oil in a large saucepan or wok over medium-high heat. Add the laksa paste and fry for 2–, stirring constantly, until fragrant.

Pour in the chicken stock and coconut milk. Stir well and bring to a gentle simmer.
