300 g Tenderstem broccoli — trimmed at the base if woody
3 cloves garlic — thinly sliced (or minced, depending on your preference)
1 tablespoon extra virgin olive oil — plus a small knob of butter for extra richness, optional
fresh lemon juice
1 teaspoon toasted sesame seeds or flaked almonds — optional, for a bit of crunch
sea salt flakes
black pepper
dried chilli flakes — optional, if you like a little kick

Instructions

Rinse the Tenderstem broccoli and pat it dry thoroughly with a clean tea towel or kitchen paper.

Place a large frying pan or skillet over medium-high heat and add the olive oil.

Add the Tenderstem broccoli in a single layer. Let them cook undisturbed for about 2 to so the stalks develop a nice, charred bottom.

Turn the broccoli over. Add the sliced garlic and a splash of water (about 2 tablespoons) to the pan, then immediately cover with a lid or a sheet of foil for .

Remove the lid, let any remaining water evaporate, and toss the broccoli directly in the garlic-infused oil. If using, stir in the knob of butter until melted and glossy.

Remove from the heat, squeeze over a little fresh lemon juice, and season with sea salt flakes, ground black pepper, and chilli flakes or toasted seeds. Serve warm right away.
