100 g cold butter — cubed
3 tbsp cold water
400 g golden syrup
120 g fresh white breadcrumbs
1 piece lemon — zest and juice
1 piece egg — beaten

Rub the butter into the flour until it resembles fine breadcrumbs. Add the water a tablespoon at a time until a dough forms. Wrap and chill for .

Preheat your oven to 190°C (170°C fan).

Roll out the pastry on a lightly floured surface and line a 23 cm loose-bottomed tart tin. Prick the base with a fork.

Line the pastry case with baking parchment and fill with baking beans. Blind bake for .
