150 g caster sugar
80 g melted butter
2 piece egg — beaten
200 g plain flour
1 tsp baking powder
0.5 tsp bicarbonate of soda
1 tsp ground cinnamon
80 g walnuts — roughly chopped
1 tsp vanilla extract
0.25 tsp salt

Instructions
Step by step

Preheat your oven to 180°C (160°C fan). Grease and line a 900 g loaf tin with baking parchment.

In a large bowl, mix the mashed bananas, melted butter, caster sugar, beaten eggs and vanilla extract until well combined.

In a separate bowl, sift together the flour, baking powder, bicarbonate of soda, cinnamon and salt.

Fold the dry ingredients into the banana mixture until just combined. Do not overmix.

Stir in three-quarters of the chopped walnuts, reserving the rest for topping.

Pour the batter into the prepared loaf tin and smooth the top. Scatter the remaining walnuts over the surface.

Bake for 55– until a skewer inserted into the centre comes out clean.

Leave to cool in the tin for , then turn out onto a wire rack to cool completely before slicing.
