100 g golden caster sugar
80 ml vegetable oil
60 ml unsweetened plant milk — oat or almond

Preheat the oven to 180°C (160°C fan). Grease and line a 900 g (2 lb) loaf tin with baking parchment.

In a large bowl, whisk together the flour, baking powder and cinnamon.

In a separate bowl, beat together the mashed bananas, peanut butter, sugar, oil, plant milk and vanilla extract until smooth.

Pour the wet ingredients into the dry and fold gently until just combined—do not overmix.

Scrape the batter into the prepared tin and smooth the top.
