115 g unsalted butter — softened
100 g caster sugar
50 g light brown soft sugar
1 piece large egg
1 tsp vanilla extract
150 g plain flour
0.5 tsp bicarbonate of soda
0.25 tsp salt
100 g milk chocolate chips
500 ml vanilla ice cream — slightly softened

Instructions

Preheat the oven to 180°C (160°C fan). Line two baking trays with baking parchment.

In a large bowl, beat together the softened butter, caster sugar and brown sugar until light and fluffy.

Beat in the egg and vanilla extract until smooth.

In a separate bowl, whisk together the flour, bicarbonate of soda and salt. Fold into the wet ingredients until just combined.

Stir in the chocolate chips.

Roll the dough into 12 equal balls and place on the prepared trays, spacing well apart. Flatten each gently with your palm.

Bake for 10– until the edges are golden but the centres still look slightly soft. Leave to cool on the trays for , then transfer to a wire rack to cool completely.

Once the cookies are fully cooled, take one cookie, place a scoop of vanilla ice cream on the flat side, then top with a second cookie. Press gently to sandwich. Repeat with remaining cookies and ice cream.

Wrap each sandwich in cling film and freeze for at least 2 hours before serving.
