300 g frozen mixed berries — strawberries, blueberries, raspberries
150 ml water
1 tbsp lemon juice — freshly squeezed
3 tbsp chia seeds
200 ml natural yoghurt — unsweetened, for topping

Instructions
Step by step

Place the frozen berries and water in a small saucepan over a medium heat. Simmer gently for 5– until the berries have broken down and released their juices.

Remove from the heat and stir in the lemon juice. Use the back of a spoon to mash any large pieces of fruit.

Stir in the chia seeds and leave to stand for , stirring once or twice, until the mixture begins to thicken.

Divide the berry-chia mixture between four small glasses or ramekins.

Cover and refrigerate for at least 2 hours, or until set to a soft jelly consistency.

Just before serving, spoon a dollop of natural yoghurt on top of each pot.
