60 ml dry white wine or vegetable stock — (such as Sauvignon Blanc or Chardonnay)
1 pinch freshly grated nutmeg — generous
1 pinch flaky sea salt — to taste

0.5 unit fresh lemon juice — (to balance the richness)
1 bunch fresh flat-leaf parsley — (for garnish)

Melt the butter and olive oil together in a large, deep frying pan or sauté pan over a medium-low heat.

Add the diced onion (if using) and sauté for 3 to until translucent.

Add the drained leeks and minced garlic, tossing well to coat them in the fats.

Reduce the heat to low, cover the pan with a tight-fitting lid, and let the leeks sweat in their own moisture and the butter for 12 to , stirring occasionally.

Remove the lid, turn the heat up to medium, and pour in the white wine (or stock). Let it bubble and simmer uncovered for 3 to until almost entirely evaporated.

Pour in the double cream and grate in a generous pinch of fresh nutmeg. Season with flaky sea salt and freshly ground black pepper.

Simmer gently uncovered for 4 to , stirring frequently, until the cream reduces slightly and coats the back of a spoon into a luscious, velvety sauce.

How to Prepare the Leeks: Proper preparation is the most important step to remove any trapped grit or soil. Trim: Cut off and discard the dark green leafy tops and the root ends, leaving mostly the white and pale green parts. Peel away any tough or bruised outer layers. Slice: Cut the leeks lengthwise down the middle, then slice them horizontally into even half-moons (roughly 1cm thick) or thin ribbons depending on preference. Wash: Place the sliced leeks into a large bowl filled with cold water. Swish them around vigorously with your hands. The grit and dirt will sink to the bottom of the bowl. Drain: Lift the leeks out of the water using your hands or a slotted spoon (leaving the sediment behind in the bowl) and transfer them to a colander to drain thoroughly.
