Pumpkin seed flour

Also known as: pepita flour

A fine, dark-green powder made from cold-pressed pumpkin seeds after most of the oil has been extracted. It is high in protein and magnesium, entirely nut-free, and can replace up to 25 per cent of plain flour in baked goods. It imparts a distinctive earthy colour and flavour to bread, muffins, and pancakes.
