80 g fresh breadcrumbs
1 piece lemon — zest and juice
3 tbsp fresh parsley — finely chopped
1 clove garlic — minced
2 tbsp olive oil
20 g butter — melted
1 pinch black pepper — to taste
1 pinch salt — to taste

Instructions

Preheat your oven to 200°C (180°C fan).

Pat the cod fillets dry with kitchen paper and arrange them in a lightly oiled baking dish.

In a mixing bowl, combine the breadcrumbs, lemon zest, chopped parsley, minced garlic, olive oil and melted butter. Season with salt and black pepper.

Press the breadcrumb mixture evenly over the top of each cod fillet, forming a light crust.

Drizzle the lemon juice over the fish and bake in the preheated oven for 15–, until the fish is opaque and flakes easily with a fork and the topping is golden.

Serve immediately with steamed green beans, broccoli or a green salad.
