2 tbsp caster sugar
2 tsp baking powder
0.5 tsp bicarbonate of soda
0.25 tsp salt
250 ml buttermilk
1 piece egg — beaten
30 g butter — melted and cooled, plus extra for the pan
150 g blueberries — fresh or frozen

Instructions
Step by step

In a large bowl, whisk together the flour, sugar, baking powder, bicarbonate of soda and salt.

In a jug, combine the buttermilk, beaten egg and melted butter.

Pour the wet ingredients into the dry and stir gently until just combined. Do not overmix; a few lumps are fine.

Fold in the blueberries.

Heat a non-stick frying pan or griddle over medium heat and add a small knob of butter.

Pour about 60 ml of batter per pancake into the pan. Cook for 2– until bubbles appear on the surface and the edges look set.

Flip and cook for another 1– until golden and cooked through.

Keep warm while you cook the remaining batter, adding more butter to the pan as needed.

Serve warm with maple syrup, extra blueberries and a dusting of icing sugar if desired.
