200 g basmati rice
1 cube beef stock cube — or chicken
low-calorie cooking spray
4 pieces bacon medallions — diced
400 g lean beef mince — 5% fat or less
1 onion — finely chopped
2 tbsp Worcestershire sauce
2 carrots — sliced
2 red, green or yellow peppers — deseeded and sliced
150 g button mushrooms — sliced
Cajun seasoning — plus extra to taste
1 pot chicken or beef stock pot — dissolved in 300ml hot water
spring onions — trimmed and thinly sliced

Instructions
Step by step

Cook the rice according to the packet instructions, adding the beef and chicken stock cube to the water before cooking. Set the rice aside once cooked.

Spray a frying pan with some low-calorie cooking spray and place over medium heat. Add the minced beef, onion, and bacon and cook for 3-, stirring often. Add the Cajun seasoning and Worcestershire sauce and stir, then add the carrots, mushrooms, peppers, and the chicken stock. Cook for 3- until the peppers start to soften.

Add the cooked rice and spring onions to the pan and stir over medium heat until all the rice is coated and has warmed through. Taste and add more Cajun seasoning if you prefer it spicier, then serve.
