200 g spelt-type biscuits or shortbread cookies
80 g melted butter
600 g fresh cheese type Philadelphia or St Moret
150 g sugar
200 ml liquid cream
3 eggs
1 teaspoon vanilla
3 apples
30 g butter for the apples
50 g brown sugar
1 teaspoon cinnamon
liquid caramel for the topping

Mix the biscuits and mix with the melted butter. Pour into the bottom of a pastry shell with parchment paper and refrigerate.

Whisk the fresh cheese with the sugar, vanilla, and cream. Add the eggs one at a time without overbeating.

Pour the mixture over the biscuit base.

Bake at 160°C for 50 to . The center should remain a bit wobbly. Let cool then refrigerate for at least 4 hours.

Peel the apples and cut into slices. Sauté them in a pan with butter, brown sugar, and cinnamon until tender and caramelized.

Arrange the apples on the chilled cheesecake and drizzle with caramel just before serving.
