8 piece wholemeal soda bread — sliced thickly
200 g cooked ham — sliced
2 piece tomatoes — medium, sliced
40 g rocket
2 tsp Dijon mustard — optional
30 g unsalted butter — softened

Instructions
Step by step

Lightly butter one side of each slice of soda bread.

If using, spread a thin layer of Dijon mustard on four of the buttered slices.

Layer the ham slices evenly over the four mustard-spread slices.

Top the ham with tomato slices and a handful of rocket.

Place the remaining four slices of bread on top, buttered-side down, and press gently.

Cut each sandwich in half and serve immediately.
