3 tbsp maple syrup
2 tbsp Dijon mustard
1 tbsp cider vinegar
2 clove garlic — minced
3 piece eating apples — cored and cut into wedges
2 tbsp olive oil
4 piece fresh thyme — sprigs
1 pinch black pepper

Preheat the oven to 200 °C (fan 180 °C). Line a large baking tray with foil.

In a small bowl, whisk together the maple syrup, Dijon mustard, cider vinegar and minced garlic.

Season the pork chops with black pepper. Heat 1 tablespoon olive oil in a large frying pan over medium-high heat and sear the chops for each side until golden.

Transfer the chops to one side of the prepared baking tray. Brush generously with half the maple-mustard glaze.

Toss the apple wedges with the remaining tablespoon of olive oil and arrange on the other side of the tray. Tuck the thyme sprigs among the apples.

Roast for , then brush the chops with the remaining glaze and turn the apples. Roast for another until the pork reaches 63 °C internal temperature and the apples are tender and caramelised.
