4 piece wholemeal soda bread — thick slices
4 piece eggs — hard-boiled and peeled
2 piece tomatoes — medium, sliced
20 g butter — softened
1 pinch black pepper
1 tbsp fresh parsley — chopped (optional)

Instructions
Step by step

Lightly butter each slice of soda bread on one side.

Slice the hard-boiled eggs into rounds about 5 mm thick.

Arrange the egg slices on two of the buttered bread slices, overlapping slightly.

Top with tomato slices and season with a pinch of black pepper.

Scatter over the parsley if using, then top with the remaining bread slices, buttered-side down.

Slice each sandwich in half and serve immediately or wrap for a lunchbox.
