Shopping list

  • 0.5 cup butter

  • 1 ice cube

  • 1 l arge egg

  • 1 teaspoon vanilla extract

  • 0.25 cup granulated monk fruit sweetener

  • 0.5 teaspoon baking powder

  • 0.5 teaspoon salt

  • 8 squares

  • 85 % cacao dark chocolate

Instructions

Step by step

  1. 1

    Preheat oven to 350°F.

  2. 2

In a large cast-iron skillet over medium-high heat, melt the butter until it begins to bubble and foam. Reduce the heat to low and cook, stirring frequently, until the butter begins to brown and smell nutty.

  3. 3

Remove from the heat. Carefully add an ice cube to the butter and whisk thoroughly for 1- or until the butter is cooled.

  4. 4

In a large bowl, whisk together the egg, vanilla, and monk fruit sweetener. Whisk in the brown butter.

  5. 5

Stir in the almond flour, baking powder, salt, and half the chocolate. Mix well.

  6. 6

Pour the batter into the cast iron skillet. Top with the remaining chocolate.

  7. 7

Bake in the oven for 25- or until crispy on the edges and slightly underbaked in the middle (a toothpick inserted in the middle may have some crumbs cling to it). Remove from oven and allow to cool for 5- before slicing and serving.
