8 piece gluten-free bread — white or wholemeal
200 g mature cheddar cheese — grated
4 tbsp Branston pickle or similar — check label for gluten-free status
50 g unsalted butter — softened

Instructions
Step by step

Butter one side of each slice of bread with the softened butter.

Place four slices buttered-side down on a clean board. Spread each with 1 tablespoon of pickle.

Divide the grated cheddar evenly over the pickle, then top each with another slice of bread, buttered-side up.

Heat a large non-stick frying pan or griddle over a medium heat.

Carefully place the sandwiches in the pan (work in batches if needed) and cook for 3– until the underside is golden and crisp.

Flip each toastie and cook for a further 3–, pressing down gently with a spatula, until the cheese is melted and the second side is golden.

Remove from the pan, slice in half and serve hot.
