160 g tinned tuna in spring water — drained
3 tbsp mayonnaise
80 g cucumber — thinly sliced
8 piece white or wholemeal bread — sliced
30 g butter — softened

Instructions

In a bowl, flake the drained tuna with a fork and mix in the mayonnaise until well combined.

Lightly butter all eight slices of bread on one side.

Spread the tuna mixture evenly over four slices of bread.

Top with thin cucumber slices, then place the remaining buttered slices on top, buttered side down.

Cut off the crusts if desired, then slice each sandwich into triangles or fingers. Serve immediately or wrap in greaseproof paper for lunchboxes.
