0.5 tsp bicarbonate of soda
150 g smooth peanut butter — unsalted, no added sugar
80 ml coconut oil — melted
120 ml maple syrup
180 ml unsweetened almond milk
1 tsp vanilla extract
100 g dairy-free dark chocolate chips

Preheat your oven to 180 °C (fan 160 °C). Grease and line a 20 cm square cake tin with baking parchment.

In a large bowl, whisk together the flour, baking powder and bicarbonate of soda.

In a separate bowl, beat together the peanut butter, melted coconut oil, maple syrup, almond milk and vanilla extract until smooth.

Pour the wet mixture into the dry ingredients and fold gently until just combined—do not overmix.

Stir in three-quarters of the chocolate chips.

Pour the batter into the prepared tin, smooth the top and scatter over the remaining chocolate chips.

Bake for 30– until a skewer inserted into the centre comes out clean or with a few moist crumbs.

Cool in the tin for , then turn out onto a wire rack to cool completely. Cut into squares and store in an airtight tin for up to 4 days.
