4 piece thick cod fillets — skinless, about 150 g each
600 g new potatoes — halved if large
200 g green beans — trimmed
1 piece lemon — zest and juice
3 tbsp fresh parsley — chopped
30 g butter — melted
1 tbsp olive oil
1 clove garlic — minced
0.75 tsp sea salt
0.5 tsp black pepper

Preheat the oven to 200°C (180°C fan). Line a baking tray with baking parchment.

Bring a large pot of salted water to the boil. Add the new potatoes and cook for 12– until just tender. Drain and set aside.

Meanwhile, in a small bowl, mix the melted butter, lemon zest, lemon juice, garlic, chopped parsley, salt and pepper.

Arrange the cod fillets on the prepared tray. Spoon the lemon herb butter over each fillet.

Bake for 12– until the fish is opaque and flakes easily with a fork.

While the fish bakes, steam or boil the green beans for 4– until tender-crisp. Drain and toss with a drizzle of olive oil.

Serve the cod alongside the new potatoes and green beans, spooning any pan juices over the fish.
