Kitchen Help

Shopping list

  • 500 g cold mashed or roast potato

  • 300 g cooked cabbage — or Brussels sprouts, shredded and well drained

  • 1 whole small onion — finely diced

  • 1 whole small carrot — cooked and diced

  • 2 tbsp butter

  • 1 tbsp beef dripping, lard, or vegetable oil — for frying

  • 1 pinch salt and black pepper

Tools

  • · large bowl
  • · large cast iron frying pan
  • · spatula

Instructions

Step by step

  1. 1

Put the cold potato, cabbage, carrot if using, and a good pinch of salt and pepper in a large bowl. Mix until just combined. You want it to hold together but still look rustic, not smooth.

  2. 2

Soften the onion: Melt half the butter in a large cast iron or heavy frying pan over medium heat. Cook the onion for 4 to until soft and golden. Tip it into the potato mix and stir through.

  3. 3

Shape it: You can make one big cake, which is the most traditional way, or shape into 4 thick patties. Press them firmly so they do not fall apart.

  4. 4

Heat the dripping and remaining butter in the same pan over medium-high heat. Add the bubble and squeak. Press down gently with a spatula. Don’t fiddle too much. To get the crust cook it undisturbed for 6 to until deeply golden and crisp underneath. You should hear it bubbling and squeaking.

  5. 5

Flip the big cake in one go, or flip each patty. Cook for another 6 to until crisp on the second side. If making one big cake, you can finish it under the grill for for extra crunch.
